Historical notes

Form a generous and lucky harvest came out from our vineyards in 2015, we fermented separately each grape by typology. The high quality of grapes obtained persuaded us to make a special French cuvee and get mature the wines on French tonneaux barrels of Allier and Nevers. After 15 months in constant contact with the wood, the wine was then transferred into stainless steel tank for the final assembly

Blend and wine making

Grapes: 80% Petit Verdot, 20% Cab. Sauvignon
The grapes, having undergone the “cruel” green harvest in July reducing fruits to half of their original quantity, are carefully hand picked up a maximum yield of 1,5 kg. per plant. Harvest started in September first with the Petit Verdot then 2 weeks later with the Cab. That takes more time to be mature. They been fermented at 25° Celcius for two weeks for the best possible extraction of polyphenols, and then been assembled in January on oak starting their maturation. After 15 months wine has been bottled, and will not be released before two years after the harvest.

Organoleptic test

Colour: deep ruby red with bright garnet . Bouquet: intense, persistent, with highlighted character of vanilla, tobacco and ripe fruits such as blueberries and cherries in brandy. Flavour: dry, savoury, very warm with fabric enveloping good tannins, with an impressive long persistence. Ageing: ready to drink after two, three years , will improve and give his best for six years and more.

Serving with food

pairing pasta dishes like pappardelle with hare, venison or wild boar, duck with pomegranate or pork tenderloin with balsamic vinegar. Welcomed also with well-seasoned pecorino or goat cheeses.
